Gingerbread Blondies Recipe

Christmas is approaching and what could be better to include a festive twist than upgrading your classic brownie recipe! The combination of spices adds a subtle winter warmth to a rich, delicious, gooey brownie.


  • 200g unsalted butter
  • 250g light brown sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 275g plain four
  • 2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 200-300g white chocolate


  1. Pre-heat oven to 180℃/160℃ fan.
  2. Grease and line a 9inch square tin
  3. Melt butter then beat with sugar until smooth
  4. Add eggs and vanilla extract, mixing until combined
  5. Add in dry ingredients so that the mixture becomes thick
  6. Break up the white chocolate into small pieces and add
  7. Transfer the mixture into prepared tin
  8. Bake for 25 minutes
